I seriously can’t believe it’s Wednesday already! And surprisingly I haven’t been snacking all that much! Maybe it’s because I’ve been eating large and healthy meals to keep me full. None the less, as always, thank you to Jenn @ Peas and Crayons for hosting!

For lunches I have made pattypan squash filled enchiladas! Ohhh, yummy and spicy! These things are super portable too.
I also have had Bengali Curry! It’s filled with potatoes and hard boiled eggs. Pretty neat huh? Come back Friday for the recipe, you won’t be dissapointed, promise!
I’ve also been indulging in Thai green curry with zucchini! Isn’t Thai a wonderful way to get veggies? I love the flavor combinations of citrus, spicy, sweet, and salty. Want the recipe? Click here!
I haven’t had many snacks this week, but what I have had is caprese! Look out tomorrow for the Thursday tip of making vegan/dairy free caprese!
While I love the pie, I have to say my favorite was the Thai green curry. The bengali curry is very close though!
