Tasty Tip Thursday- Vegan Caprese

Caprese is one of my favorite meals! It’s a wonderful, fresh, summertime salad. You can see by my WIAW post, I just love caprese. I mentioned I would tell a vegan caprese idea. However, this isn’t just for vegans. Many people are hesitant to heating lots of caprese due to the calories in mozzarella, or they don’t eat cheese due to dietary restrictions.

I love caprese so much though, I want everyone to be able to enjoy! Thus, my Mom (so proud of her) came up with a great subsitute- avocado. The flavors blend excellent and it’s a great healthy fat.

Also, did you know that traditionally, balsamic vinegar is not drizzled on caprese? Only olive oil should be drizzled over the salad for a “traditional” caprese. I however, do it the opposite way. I’d much rather have balsamic vinegar over olive oil! Less calories and more flavor. No matter which you use, or both, caprese is a wonderful and healthy salad.

  1. I had no idea that balsamic vinegar isn’t the traditional topping for caprese! Using avocado instead of mozzarella is a great idea–my husband would love this. :) I’m not a big salad eater, but anything with a light, fruity vinaigrette is good by me.
